Ingredients:
½ cup vermicelli (seviyan) noodles
2 cups whole milk
⅓ cup sugar (adjust to your taste preference)
1 tablespoons ghee (clarified butter)
1/4 cup mixed nuts (almonds, cashews, and raisins), chopped
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
1 tbsp chopped dry fruits.
Instructions/Recipe:
In a heavy-bottomed pan or a deep saucepan, heat the ghee ovIn a heavy-bottomed pan or a deep saucepan, heat the ghee over medium heat. Once the ghee is hot, add the chopped nuts (almonds, cashews, and raisins). Fry them until the nuts turn golden brown. Keep them aside.
In the same pan, add the vermicelli noodles and roast them in the ghee until they turn golden brown. Stir continuously to avoid burning. This should take around 2-3 minutes. Once done, remove the roasted vermicelli from the pan and keep it aside.
In the same pan, pour the whole milk and bring it to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
Once the milk starts boiling, add the roasted vermicelli noodles and stir well. Let it simmer on low heat until the vermicelli becomes soft and the milk thickens. It usually takes around 10-15 minutes. You can cover the pan partially to avoid splatters.
While the vermicelli is cooking in the milk, you can add saffron strands soaked in a tablespoon of warm milk and cardamom powder to enhance the flavor.
Once the vermicelli is cooked and the milk has thickened, add sugar and mix well. Continue to cook for another 3-5 minutes until the sugar dissolves completely, and the Sewian becomes creamy and sweet.
Now, add the fried nuts (from step 1) and mix them into the Sewian. If you prefer, you can also add rose water for a delightful aroma.
Turn off the heat and let the Sewian sit for a few minutes to cool slightly. It will thicken further as it cools.
Serve the Sewian warm or chilled, garnished with edible silver or gold leaf, and enjoy this delightful Indian dessert with your family and friends!

The consistency of Sewian can be adjusted to your preference.
If you like it thinner, you can add a little more milk, and if you prefer it thicker, let it simmer for a bit longer until it reaches the desired consistency.
